  • 2 pounds bone in beef short ribs
  • 4 tablespoons olive oil
  • 1 onion sliced
  • 1 small carrot sliced
  • 4 cups beef broth
  • 2 cloves garlic smashed
  • 2 sprigs thyme
  • Sea salt and fresh ground pepper to taste


  1. Season the short ribs with salt and pepper. Heat a heavy, deep skillet over medium high heat. Add the short ribs and cook until well browned, then transfer to the slow cooker.
  2. Add the onions and carrot to the skillet and cook until softened; add these to the slow cooker as well. Add the remaining ingredients and then cover and cook on low heat for approximately 8 hours, until beef is tender. Serve with mashed cauliflower or other side of your choice.
