  • 1 5 oz can of tuna drained
  • 1 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 1 tablespoon capers
  • 1 tablespoon fresh chopped parsley
  • 1 clove garlic minced
  • 2 firm crisp lettuce leaves left intact
  • 1/4 cup diced tomatoes
  • Sea salt and fresh ground pepper to taste


  1. Combine the tuna, oil, lemon , capers, parsley and garlic in a bowl. Season with salt and pepper. Spoon into the lettuce leaves and top with the tomatoes before serving.
