Coconut Creamed Cucumbers

The coconut milk and cucumbers in this easy side dish get a punch of heat from the pepper. This easy summer side dish is great for a backyard barbecue.

  • 2 cucumbers sliced
  • 1/2 cup coconut milk
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon fresh chopped dill
  • Sea salt to taste


  1. Combine all of the ingredients in a large bowl. Let stand at room temperature for 20 minutes or so to develop the flavors. Serve at room temperature or chilled.
