If you miss your starchy hashed browns, this green version will hit the spot. Perfect alongside eggs and bacon or just as a quick veggie side.

  • 1 zucchini grated
  • 1 egg
  • 2 green onions diced
  • 2 tablespoons olive oil
  • Sea salt and fresh ground pepper to taste


  1. Combine the zucchini and the egg in a bowl with the green onions.
  2. Heat the oil in a skillet and fry spoonfuls of the zucchini until crisp. Serve hot.
