Hot Pepper Honey Glazed Chicken Thighs

Sweet, spicy, and rich with flavor, these chicken thighs are the perfect weeknight meal. Serve with sautéed spinach or mashed cauliflower for a complete meal.

Ingredients

  • 2 tablespoons sesame oil
  • 1 teaspoon ground ginger
  • 2 green onions sliced
  • 1 clove garlic minced
  • 1 teaspoon crushed red pepper flakes
  • 12 ounces chicken thighs
  • 1 cup chicken broth
  • 1/4 cup honey
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Preheat oven to 375 degrees F. Line a baking sheet with foil or parchment.
  2. Heat the oil in a heavy bottomed skillet. Add the ginger, green onions, garlic, and pepper flakes. Cook for about a minute and add the chicken to the pan.
  3. Cook the chicken until browned on both sides and transfer to the prepared baking sheet, leaving the remaining ingredients in the pan. Bake for 25-35 minutes, until chicken is cooked through.
  4. While the chicken is in the oven, add the broth and honey to the pan the chicken was cooked in. Bring to a rolling boil, reduce to a simmer, and simmer until reduced by about half.
  5. When the chicken is done, serve it drizzled with the honey glaze.
