Quick Pickles

Pickles are one of those things that you may just think of as an uninspiring condiment, until you've had the homemade variety. These are quick to make, and make the perfect Paleo snack. Put them out for an appetizer, and you'll be amazed at how quickly they disappear.

Total Time 20 minutes

Ingredients

  • 1 cup white vinegar
  • 1 cup water
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon crushed red pepper flakes
  • 1 bay leaf
  • Fresh herbs: sprigs of dill parsley, or rosemary
  • 1 tablespoon kosher salt
  • 4 cucumbers sliced

Instructions

  1. Put all of the ingredients except the cucumbers in a medium saucepan and bring to a boil. Turn off heat.
  2. Put the cucumbers in a jar. Pour the liquid, including the herbs/spices in the jar and allow to sit at room temperature until cool.
  3. Seal and refrigerate until ready to serve. They can be enjoyed immediately, but will develop more flavor over several days.
