Paleo Meatballs

Ingredients

  • 1 lb Ground beef
  • 1 Egg
  • 1/2 c Bell pepper (chopped)
  • 1/2 c Zucchini (shredded)
  • 1/2 c Onion (chopped)
  • 1/4 c Coconut flour
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • Salt and pepper (to taste)
  • Muffin cups

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a big bowl. Mix well.
  3. Using hands, make fist-sized balls, and place in muffin cups (makes 12-15 medium sized balls). Be sure to adjust baking time if you decide to make the meatballs larger or smaller.
  4. Line muffin pan or cookie sheet with muffin cups. Fill cups with rounded handfuls of the meat mixture.
  5. Bake in the preheated oven for 25 minutes.

Recipe Notes

These meatballs have a variety of uses! Serve with red sauce, and over sautéed veggies for a tasty spaghetti with meatballs, or freeze the meatballs, and thaw for quick protein on the go!
