Winter Beet Salad

Ingredients

  • 1 can Beets (15 oz)
  • 1/2 Purple onion (small , thinly sliced)
  • 2 c Cabbage (sliced)
  • 1 tbsp Orange zest
  • 1 Orange (thinly sliced, skin removed)
  • 1 tsp Salt
  • 2 tbsp Fresh parsley (chopped)
  • 1 1/2 tbsp EVOO
  • 1/2 tbsp Apple cider vinegar
  • Drizzle of honey (optional)

Instructions

  1. Open and drain the can of beets, and add to a large serving bowl.
  2. Add in thinly sliced onion, cabbage, orange zest, and orange. Mix gently.
  3. Sprinkle with salt, EVOO, parsley, vinegar, and honey. Toss.
  4. Serve with more fresh chopped parsley as a garnish if desired.
