Paleo Porridge

Ingredients

  • 4 Eggs
  • 2 tbsp Coconut flour
  • 1/2 c Raisins
  • 1/2 c Coconut milk
  • 1 pinch Salt
  • Seasoning of choice (cinnamon, pumpkin pie spice, vanilla, etc.)

Instructions

  1. Whisk four eggs in a small bowl.
  2. Once whisked, add coconut flour, coconut milk, and salt. Mix well.
  3. Once combined, bring to medium heat (do not boil) in a small sauce pan, stirring constantly.
  4. The porridge will begin to thicken. Stir until desired consistency is reached.
  5. Serve hot.
  6. Garish with seasonings, banana slices, fresh fruit, additional coconut milk, Paleo Granola*, or Crock-Pot Fig Apple Butter**.
