Easy Cucumber Salad

  • 3 c Cucumber (thinly sliced)
  • 1/2 c Red onion (thinly sliced)
  • 1 tbsp olive oil
  • 2 tbsp Apple cider vinegar
  • Salt and pepper (to taste)


  1. I prefer to use a mandoline slicer to get my cukes uber thin but if you have mad knife skills, feel free to slice away and thinly slice both cucumbers and red onion.
  2. Toss the cukes and red onion with olive oil, vinegar, and salt and pepper to taste.
  3. Serve immediately and, if desired, garnish with fresh herbs such as dill, cilantro, or oregano.

Recipe Notes

This will store well in the fridge for about 1 day before it begins to get soggy. For leftovers, consider adding 1/2 a can of water-packed tuna to the salad and much away! Quick and easy!
