Twice Baked Sweet Potato

Ingredients

  • 2 Sweet potatoes
  • Coconut oil
  • Sea salt
  • 1 c Chicken (shredded)
  • 1/3 c Fresh green onions (diced)
  • Avocado (sliced, optional garnish)
  • Hot sauce (optional garnish)
  • Fried egg (optional garnish)

Instructions

  1. Preheat oven to 350 degrees.
  2. Poke sweet potatoes all over with a knife and use hands to slather some coconut oil onto the skins. Lightly sprinkle with sea salt and cook for 1 hour at 350 degrees.
  3. Once potatoes are done, cut open, and stuff with shredded chicken. Place back into the oven for 15 minutes or until middle is warmed through.
  4. Garnish with fresh chopped green onion, sliced avocado, hot sauce, and/or a fried egg.
