Pork Roll with Eggs Over Easy

Ingredients

  • 1 lb Ground pork
  • 6 slices bacon
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/4 tsp Ground ginger
  • 1/2 tsp Salt
  • 1 Shallow (minced)
  • 2 tbsp Almond meal
  • Coconut oil
  • 4-6 Eggs

Instructions

  1. In a medium mixing bowl, mix together the pork, spices, salt, and shallot using your hands to blend well.
  2. Form 6 pork rolls that are evenly sized.
  3. Wrap each pork roll in a slice of bacon.
  4. Heat the coconut oil in a skillet on medium-high heat.
  5. Add the pork rolls and sear on each side, making sure the bacon does not come up wrapped.
  6. Once seared on each side, turn the heat down to medium-low and allow the pork to cook through, turning occasionally to prevent the bacon from burning.
  7. While the pork roll is cooking, use a nonstick skillet to cook the eggs.
  8. Serve the pork roll with an egg and side of roasted asparagus if desired.
  9. Enjoy.
