Curried Vegetable Skillet with Fried Eggs

  • 4 tbsp olive oil
  • 1 tbsp Curry powder
  • 2 cups Baby spinach
  • 2 Leeks (sliced)
  • 1 Carrot (grated)
  • 2 Garlic cloves (minced)
  • 4 Eggs
  • Sea salt and fresh ground pepper (to taste)


  1. Heat half the oil in a large skillet. Add the vegetables and cook until soft. Stir in the curry powder, cook for an additional minute, and then turn off heat.
  2. Heat a nonstick skillet over medium high heat. Add the remaining oil and fry the eggs to your liking.
  3. Serve the eggs on top of the vegetables.
