Ginger Zucchini Bread

Ingredients

  • 1 cup Almond flour
  • 1/2 tsp Sea salt
  • 2 tbsp Cinnamon
  • 1 tbsp Ground ginger
  • 2 tbsp Honey
  • 1 tsp Ground cloves
  • 1/2 tsp Baking soda
  • 1/2 tsp Allspice
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla
  • 1 Zucchini (small, grated)
  • 3 Eggs

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine the almond flour, salt, baking soda, and spices in a bowl. In a separate bowl, mix the remaining ingredients. Whisk well and add to the dry.
  3. Brush a loaf pan with coconut oil or cooking spray. Pour the batter into the pan and bake for 40 to 50 minutes, until a toothpick inserted in the center comes out clean. Allow to cool before slicing.
