Chicken and Vegetable Bowl

Ingredients

  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 Bell peppers any color, sliced
  • 1 Red onion sliced
  • 4 cups Spinach chopped
  • 1/2 cup shredded carrots
  • 2 tablespoons Lemon juice
  • 1/2 cup Chopped fresh parsley
  • 2 cups cooked and shredded chicken breast
  • Sprouts or microgreens for garnish
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Heat the oil in a heavy bottomed skillet over medium heat. Add the garlic, peppers, and onion and cook until softened. Add the spinach and carrots and cook until spinach is wilted. Add the parsley and lemon juice and turn off heat. 
  2. Stir the chicken into the vegetables and serve topped with the sprouts.
