4cupsmixed cubed vegetables of your choice: squashzucchini, bell peppers, onions, etc.
Instructions
Whisk the oil, lime, lemon, honey, coriander, salt, and pepper in a large bowl until well combined. Add the shrimp and veggies to the bowl and toss to coat.
Thread the shrimp and vegetables onto skewers.
Preheat a gas or charcoal grill to medium high heat. Grill until shrimp turn pink and vegetables are charred.
