Roasted Thanksgiving Carrots

Ingredients

  • 2 pounds baby rainbow carrots tops removed
  • 2 tablespoons olive oil
  • Sea salt and fresh ground pepper to taste
  • Crumbled feta or goat cheese to serve, optional

Instructions

  1. Preheat oven to 375 degrees F.
  2. Toss the carrots with the olive oil and lay on a baking sheet. Roast for 20-30 minutes until browned and tender. Remove from oven and serve topped with cheese if desired.
