Creamy Sweet Potato and Apple Soup

  • 3 tablespoons olive oil
  • 1 Onion diced
  • 1 clove garlic minced
  • 1 Apple cored and grated
  • 2 large sweet potatoes peeled and cubed
  • 1 teaspoon Thyme
  • 5 cups Chicken broth
  • 1 cup Coconut milk
  • Sea salt and fresh ground pepper to taste


  1. Heat the oil in a large saucepan over medium heat. Add the onion, garlic, and apples, and cook until softened. Add the potatoes and thyme, and stir. 
  2. Add the broth and bring to a boil. Reduce heat to a simmer, and simmer for 20 minutes, or until potatoes are softened.
  3. Transfer to a blender and blend until smooth. Add back to the pot, add the coconut milk, and heat over low heat until hot throughout. Serve hot.
