Ingredients

  • 2 tablespoons olive oil
  • 1 Onion sliced
  • 1 Carrot sliced
  • 1 Zucchini sliced
  • 1 Green pepper sliced
  • 1 teaspoon Italian seasoning
  • 1 pound lamb cubed
  • 4 cups Chicken broth
  • fresh chopped parsley for serving

Instructions

  1. Heat the oil in a large soup pot. Add the vegetables and cook until softened. Add the Italian seasoning, and the lamb and cook until lamb is browned. Stir in the broth and bring to a boil.
  2. Reduce heat and simmer until lamb is tender. Serve topped with the chopped parsley.
