Breakfast Meatball

Who says meatballs are only for dinner? This version is made with sausage and topped with a fried egg. It's a perfect addition to a brunch if you want to impress your guests with something different, but also easy enough for a weekday morning. Serve over mixed greens for a super healthy, filling breakfast.

Ingredients

Meatballs:

  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 teaspoon ground sage
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 tablespoons olive oil

Eggs:

  • 3 tablespoons olive oil
  • 4 eggs

Instructions

  1. Preheat oven to 375 degrees F.
  2. To make the meatballs, combine all of the ingredients except the oil in a bowl and mix well. Divide into four portions and form them into a meatball. Lay on a parchment lined baking sheet. Bake for 30-40 minutes, until cooked through.
  3. After you remove the meatballs from the oven, fry the eggs in a non-stick skillet until done to your liking. Top each meatball with an egg, and serve.
