Eggs Baked in Avocado

Ingredients

  • 1 Avocado (ripe)
  • 2 Eggs
  • dash Smoked paprika

Instructions

  1. Preheat oven to 400 degrees F.
  2. Cut the avocado in half and remove the pit.
  3. Scoop out enough of the center of each avocado half so an egg will fit.
  4. Place the avocado halves face up on a baking tray.
  5. Crack an egg into each half.
  6. Bake in the oven for 15-20 minutes, until the egg sets.
  7. Remove from the oven, sprinkle with a little smoked paprika and serve.
