Southwest Turkey Hash

Never discount the amount of flavor you can get from a simple combo of spices. Some ground turkey and sweet potatoes provide a filling, nutritionally sound breakfast on a busy day.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced
  • 1 bell pepper diced
  • 1 sweet potato peeled and diced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 pound ground turkey
  • 4 eggs
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Heat the oil over medium high heat. Add the onion, pepper, and sweet potatoes. Cook until veggies are softened. Add the seasonings and cook for another minute.
  2. Add the turkey to the pan and stir and cook until turkey is cooked through.
  3. Using a spatula, form 4 small holes in the hash and crack the eggs inside. Cook until eggs are done to your liking and serve.
