Sparkling water replaces beer in a traditional batter, but still gives you crispy, gluten-free fish. This is a perfect comfort food meal, and one you’ll find yourself turning to again and again.

1cuptapioca starch
2tablespoonscoconut flour
1teaspoongarlic powder
1/2teaspoonsea salt
2eggs
1/2cupsparkling water
1 1/2poundscodcut into strips
Light olive oilfor frying
Instructions
Combine the tapioca, coconut flour, garlic powder, sea salt, eggs, and sparkling water in a large bowl. Whisk well, and let stand while you heat your oil.
In a heavy, deep skillet, pour enough oil to fill the pan several inches. Heat until very hot.
Dip the fish in the batter, and fry in the oil until golden brown, and crispy. Remove from skillet and lay on paper towels.
