Maple Glazed Veggies

For a healthy, flavorful side, this veggie dish is perfect. Enjoy with your favorite protein, or add to an omelet.

  • 2 tablespoons olive oil
  • 1 red onion sliced
  • 1 zucchini sliced
  • 1 bell pepper sliced
  • 1 teaspoon thyme
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Sea salt and fresh ground pepper to taste


  1. Heat the oil over medium heat and add the onions. Cook until softened and add the rest of the veggies and thyme. Continue cooking until soft, and stir in the maple syrup and mustard. Season with salt and pepper to taste, and serve immediately.
