Chorizo Stuffed Jalapeños

These easy appetizers are big on flavor, especially for those that like heat. If you like extra hot, you can swap habaneros for the jalapeños.

Ingredients

  • 1/2 pound chorizo
  • 1 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • 2 cloves garlic
  • 4 jalapeno peppers halved lengthwise, seeds removed
  • sea salt and fresh ground pepper to taste

Instructions

  1. Preheat oven to 350 degrees F. 

  2. In a medium skillet, cook the sausage with the spices and garlic until no longer pink. 

  3. Lay the peppers cut side up on a baking sheet. Fill with the sausage mixture.  

  4. Bake for 10-15 minutes, until peppers are lightly softened and browned.  

  5. Serve warm.
