Grilled Lemon Pepper Salmon

Ingredients

  • 4 Salmon fillets (de-boned and skinless (about 6 oz. each))
  • 2 tbs Extra virgin olive oil
  • 1 tbs Lemon zest (finely grated)
  • 2 Garlic cloves (minced)
  • 1 tsp Black pepper
  • 1 tsp Salt

Instructions

  1. Brush both sides of the salmon fillets with the olive oil. Placing the fillets on a sheet of wax paper can help this process.
  2. Add the lemon zest to the fish. Yes, I just grate the lemon right over the top of the fillets. I’m wild and crazy like that.
  3. Add the garlic, salt, and pepper to the fish. As mentioned in the introduction, if you prefer to mix the lemon zest, garlic, salt, and pepper together in a bowl, and then adding the seasoning the salmon, knock yourself out.
  4. Place the fillets on a grill. Cook for 6-7 minutes per side, depending on the thickness of your fillets. Serve them with lemon wedges, and a mixed green salad or steamed broccoli.
