Silver Dollar Hot Cakes

Ingredients

  • 2 Eggs
  • 3 tbsp Full fat coconut milk
  • 1/2 tbsp Ripe banana (Mashed, or 3 unsweetened applesauce)
  • 1/2 tsp Apple cider vinegar
  • 1/2 tsp Vanilla extract
  • 1.5 tbsp Coconut flour
  • 1/4 tsp Baking soda
  • Pinch of salt
  • Powdered Stevia to taste (to taste)
  • Coconut oil (for frying)

Instructions

  1. Put a dab of coconut oil into a pan for frying, and heat it at just under medium heat. Getting the temperature right in this recipe is the trickiest part since you want the hot cakes to cook evenly. I recommend making a few tiny hot cakes to be nibbled on during cooking at the start until you get the heat exact.
  2. Mix together all other ingredients in a bowl.
  3. Pour batter into the pan in the size of silver dollars. Cook about 1-2 minutes on each side. You’ll know it’s time to flip them when little holes appear over 75% of the hot cake.
  4. Top with butter, fresh fruit compote, whipped coconut cream, or your favorite garnish.
  5. Enjoy!
