Ham and Broccoli Frittata

Ingredients

  • 8 Eggs
  • 1 tbsp Coconut oil
  • 1/2 Red onion (small, diced)
  • 1 clove garlic (minced)
  • 1/2 Head of broccoli (cut into small florets
  • 1 Sweet potato (small, peeled and finely diced)
  • 1 cup Cooked ham (diced)
  • 1/3 cup Almond milk
  • 1 tbsp Fresh parsley (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a 10-inch oven-safe skillet or baking dish, melt the coconut oil over medium heat.
  3. Add the onion and sauté for 4-5 minutes until soft.
  4. Add in the garlic and sauté for one minute more.
  5. Add the broccoli into the skillet and cook for 5 minutes.
  6. Add the sweet potato, stirring to combine, and cook for 3-4 minutes.
  7. Stir in the ham.
  8. Meanwhile, whisk the eggs in a medium bowl.
  9. Add the almond milk and season with salt and pepper.
  10. Pour the eggs over the skillet mixture, stirring once.
  11. Cook on the stovetop for 2-3 minutes more to set the bottom of the frittata.
  12. Transfer to the oven and bake for 15-20 minutes, until the eggs are set and cooked through.
  13. Serve warm.
