Slow Cooker Balsamic Short Ribs

Ingredients

  • 2.5 lbs Bone-in beef short ribs
  • 1-2 tbsp Coconut oil
  • 1 15- oz can Tomato sauce
  • 1/2 cup Balsamic vinegar
  • 1 tbsp Honey
  • 6 cloves garlic (smashed)

For the dry rub

  • 2 tbsp Salt
  • 1 tbsp Rosemary (dried)
  • 1 tbsp Thyme (dried)
  • 2 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika
  • 1 tsp Freshly ground pepper

Instructions

  1. In a small bowl, stir together all of the ingredients for the spice rub.
  2. Pat the short ribs dry with a paper towel and rub generously with the spice mixture.
  3. Melt the coconut oil in a large skillet over medium-high heat.
  4. Working in batches, sear the short ribs for 2-3 minutes per side.
  5. Place into the slow cooker.
  6. Add the tomato sauce, balsamic, honey, and garlic to the slow cooker with the short ribs.
  7. Cover and cook on low heat for 5-6 hours until the beef is tender.
  8. Serve warm.
