Vegetable Soup with Cabbage and Onion "Noodles"

Ingredients

  • 4 c Bone broth*
  • 1 c White onion (very thinly sliced, use a mandolin slicer)
  • 1 c Cabbage (very thinly sliced)
  • 1/2 c Carrots (chopped)
  • 1/2 c Spinach (chopped)
  • 1 tbsp garlic (minced)
  • 1/2 tbsp Coconut oil
  • Salt and pepper (to taste)
  • 1 Bay leaf

Instructions

  1. Add coconut oil and minced garlic to soup pot. Warm until fragrant.
  2. Add bone broth to soup pot and turn up heat to bring soup to a slight simmer.
  3. Add cabbage, onions, carrots, and bay leaf. Simmer for 20 minutes.
  4. Once onions, cabbage, and carrots are fully cooked but not mushy, add in spinach. Simmer 5 minutes longer.
  5. Taste test the soup and add salt and pepper. Remember, the bone broth has not been salted, so you might have to be generous with the salt.
  6. Garnish with paleo-approved hot sauce.
