Broccoli Breakfast Soup

Ingredients

  • 1 bag Broccoli florets (frozen)
  • 5 1/2 c Bone broth*
  • 1/2 c Onion (diced)
  • 1 c Celery (diced)
  • 3 tbsp garlic (minced)
  • 1 tsp Tumeric
  • 1 tsp Ginger (fresh grated)
  • 1 Avocado
  • Cooking fat
  • Cayenne pepper

Instructions

  1. Melt your favorite cooking fat in a large soup pot and sauté onions, garlic, and celery on medium until translucent (about 3-5 minutes).
  2. Mix in turmeric and turn down heat.
  3. Add in bone broth, broccoli, and ginger. Stir well and bring soup to a simmer.
  4. Simmer on high for about 20 minutes or until broccoli is soft.
  5. While soup is simmering, slice up avocado and place it in a blender.
  6. Once soup is fully cooked and the broccoli is soft, add 4 cups of soup to the blender with the avocado.
  7. Blend until creamy and add back into the soup pot.
  8. Garnish with a sprinkle of cayenne pepper. Serve with a poached egg and your favorite hot sauce.
