Ingredients

  • 6 Chicken breasts and/or thighs cooked and shredded
  • 1/2 tsp Ground cumin
  • 1/2 tsp Chili powder
  • 1/8 tsp Cayenne pepper optional
  • 1/2 tsp Garlic powder
  • 1/4 tsp Onion powder
  • 1/4 tsp Ground mustard
  • 1/2 tsp Dried oregano
  • 1/2 tsp Sea salt
  • 1/2 cup Chicken broth
  • 12-16 Romaine leaves
  • Topping Options
  • 2 Tomatoes diced
  • 1/2 cup Carrot shredded
  • 1/2 cup Cabbage shredded
  • 4-6 slices bacon cooked crispy and crumbled
  • 1 Onion diced
  • 1-2 Avocados diced
  • 1 cup Broccoli shredded or diced
  • 1-2 Jalapeno diced
  • Guacamole

Instructions

  1. Add the cooked chicken to a sauce pan. Add the chicken broth. Turn on to medium low heat.
  2. Add the cumin, chili powder, garlic powder, cayenne, onion powder, ground mustard, and oregano. Stir to combine.
  3. Bring the chicken mixture to a simmer, then turn down to low.
  4. Cook until the broth has thickened slightly and chicken is heated through.
  5. Add the topping items to individual serving bowl.
  6. Stack the romaine lettuce leaves on a plate for serving.
