Sweet Potato Soup with Bacon

Ingredients

  • 2 lbs Sweet potatoes (peeled and roughly chopped)
  • 2 cups Chicken stock
  • 1 tbsp Ground cinnamon
  • 1 tbsp Ground nutmeg
  • 1 tsp Ground ginger
  • 1/2 cup Coconut milk
  • 4 slices bacon (cooked crisply and diced)

Instructions

  1. Add the sweet potatoes, chicken stock, cinnamon, nutmeg, and ginger to the slow cooker.
  2. Cook on low for 6 hours.
  3. Add the coconut milk and use your immersion blender to blend until creamy.
  4. Serve hot topped with bacon.
