ZAB Soup (Zucchini, Arugula, Basil)

Ingredients

  • 1 Onion (medium, diced)
  • 2 tbsp olive oil
  • 5 Garlic cloves
  • 3 Zucchini (medium to large)
  • 2 cups Vegetable stock
  • 1 pinch Salt
  • 1 cup Fresh basil leaves (packed)
  • 1 cup Arugula (packed)
  • 1 Lemon (juiced)

Instructions

  1. In a large pot, heat oil on high. Add diced onion and sauté until tender (3 to 4 minute) .
  2. Chop garlic and add to pot, turn heat to medium-low for 5 minute.
  3. Slice zucchini, add to pot.
  4. Add in lemon juice and pinch of salt.
  5. Bring pot contents to a simmer over high-heat, cover, turn heat down to low, and simmer 5 minutes.
  6. After 5 minutes stir contents and cook for another 10 minutes (or until zucchini is tender) .
  7. Pour soup into a blender or large food processor, adding the fresh basil and arugula directly into the blender (be cautious not to over fill blending device and always cover the top with a kitchen towel).
  8. Garnish with chopped basil and hot sauce—if you like a little heat, like I do.
