Poppy Seed Summer Squash and Carrot Salad

Ingredients

  • 2 summer squash grated
  • 1 Apple peeled and grated
  • 2 large carrots grated
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1  tablespoon raw honey
  • 1  teaspoon poppy seeds
  • 1/4  teaspoon sea salt

Instructions

  1. Put the squash, apples, and carrots in a large bowl.
  2. In a separate bowl, whisk the olive oil, lemon juice, honey, poppy seeds, and salt until well combined.
  3. Toss with the salad before serving.
