Stuffed Acorn Squash

Ingredients
- 1/2 lb Beef
- 1 Acorn squash (halved
- 1 tbsp garlic (minced)
- 1/2 Onion (small, diced)
- 1 tsp Italian seasoning
- 1 tsp Salt
- 1 tsp Fresh cracked pepper
- 1 tsp Coconut oil
Instructions

Preheat oven to 350 degrees.

Place squash halves face down on baking sheet, and bake for 60 minutes or until tender.

While squash is baking, warm coconut oil (or other cooking fat) in skillet. Add garlic and onion, and heat until fragrant.

Add beef to skillet, and brown.

Remove squash from oven, and allow to cool. Once cool, remove seeds, and discard.

Using a spoon, remove squash flesh, and add it to the skillet with the beef. Combine well.

Once the squash and beef mixture are fully combined and warmed through, use spoon to add mixture back into the squash shells.

Garnish with fresh chopped parsley.
