You don’t have to do much prep to transform the zucchini to zoodles. Be sure to wash the vegetable and the cut the ends off so you have two flat surfaces on the end. There is no need to peel the skin.
Zucchini holds a lot of moisture – which is why the recipe instructs to lay the zoodles on a paper towel and sprinkle with salt. The salt will help draw out some moisture. Before placing the zucchini in the pan, you can squeeze the zoodles with your hands to squeeze out the excess water. This will help prevent the zoodles from being too soggy.
