How To Bake The Perfect Sweet Potato
Oh sweet potatoes! If you hang around, you’ll see a fair few recipes involving this spud. Sweet potatoes are high in antioxidants, vitamins A and C, potassium, calcium, and fiber. Best of all, they taste like a sweet treat. Sweet potatoes are my go-to tasty carb source and I eat them nearly every day.

Bacon-wrapped anything is usually popular among paleo peeps. Am I right?
Now, with that said, I eat bacon in moderation. Though this tasty pork cut is considered a meat and meats tend to be thought of as proteins, I tend to classify bacon as a fat. Most bacons (minimally processed, nitrate-free) will yield a 1:1 ratio of fat:protein. So, if you’re looking to consume 25g of protein in your meal and you make bacon your protein source, you should account for 25g of fat.

My first attempt at making a morning breakfast bowl using bacon as the bowl was a success! This recipe is low-carb, gluten-free, paleo-friendly, and so easy to make.
I removed the three yolks, since I was already getting a good amount of fat from the bacon. Mmmm, bacon! I ate these right after baking them, however, I’m sure they would refrigerate/freeze well if you wanted to save a muffin or two for later.

Might I say this dish is eggsellent? I don’t know why I bought an eggplant. It was probably because it was on sale and I couldn’t resist. I’d never bought, let alone cooked, an eggplant before I made this recipe. In fact, I can count the number of times I’ve eaten it... on two fingers. I am always looking to try new vegetables, so I figured I would give the eggplant a try. This was a simple and tasty ingredient to cook with. It's also quite healthy. 1 cup of eggplant is only 33 calories. It is not only full of vitamins and minerals but antioxidants too!

Coconut Citrus Salad Dressing
In the paleo world, we tend to eat a ton of salad. Recently I’ve discovered that I love making my own dressings to spice up my green love affair.
Many dressings call for a ratio of 3:1 for EVOO and vinegar with an array of spices and a splash of a citrus. My challenge to myself was to work out how to make the dressing less fatty by taking out some of the oil without having my taste buds get sucker-punched by an overly acid vinegar/citrus taste. In this recipe, I found that substituting part of the oil with coconut milk delivered the nutritional change I was seeking without compromising on the taste.
