I recently came across this recipe for Bacon Chocolate Chip Cookies on Running To The Kitchen. I was so impressed that I wanted to share it with you because these cookies are definitely going on my “staple cookie” list to be made time and time again. I strongly encourage you to add them to yours!
I did make a few minor changes.
I doubled the recipe because this one only makes 8 cookies, and I simply cannot survive with only 8 of these delicious bites! I mean, 8? What?! We’re gonna need more than 8 cookies for this holiday season.

Scrummy Chicken Salad
2 oz x 10cans Chicken breast3 Hard boiled eggs ((chopped))1 tsp Garlic powder1 tsp Onion powder1 tsp Salt1/4 c Sunflower seeds1/2 tsp Cracked pepper1 Stalk celery ((finely chopped))1 c Red grapes ((sliced))2 tbsp Melted butterSprinkle of dill ((to taste))
Chop, and dice eggs, celery, and grapes. Gently mix them all together in a bowl.
Add canned chicken breast to the eggs, celery, and grapes.
Add seasonings and sunflower seeds, and drizzle the melted butter over everything.
Mix lightly, and serve in Bibb lettuce leaves on on a bed of fresh baby spinach.

Preheat your oven to 350 degrees F.Combine all the dry ingredients in a bowl, and then blend in all the wet ingredients.Let the batter sit for about 5 minutes or so, to allow the coconut flour to absorb the moisture.Fill mini muffin tins/papers with small amount of batter, and bake for about 25 minutes, or until a toothpick comes out clean.
